Fiber and starch are complex carbohydrates. The body needs time to break down and absorb complex carbohydrates. You will feel full longer after eating fiber. Fiber may also reduce the risk of diabetes, cardiovascular disease and colorectal cancer. Complex carbohydrates are healthier than sugar and refined carbohydrates.
